Here is the recipe that was posted on here. When I tried making it, it was a little off. It had sort of a shortening taste. I don't know if it was my oil or what. It also may have been the no cocoa. The person who posted it specifically says in the recipe not to use cocoa. I think I might try it and put in some cocoa. Anyway, here is the recipe.

My mother has several of Faye's recipes. She said to tell you all that she has felt guilty for not being able to get this to you this week due to being computer illiterate. She hasn't learned how to post yet and had to wait on me to do it. So here it is.

Faye's Red Velvet Cake

2 1/2 cups self-rising flour
1 1/2 cups sugar
1 cup Wesson oil
1 teaspoon soda
2 eggs
1 cup buttermilk
1 teaspoon vinegar
1 ounce red food coloring
1 teaspoon vanilla
* Note there is NO cocoa in this recipe. Mom said it must not have needed it, but you can add it if you want.

Mix sugar and oil. Add eggs and beat after each addition. Add vinegar. Mix soda with flour, and add alternately with buttermilk. Add vanilla and food coloring. Bake in two eight-inch cake pans at 350 degrees for 25 to 30 minutes.

Icing
8 ounce cream cheese
1 stick margarine
1 box confectioners' sugar
1 teaspoon vanilla
1 cup chopped pecans

Cream together cream cheese and margarine. Add sugar, nuts and vanilla. Mix well.

Faye Runion's red velvet cake used to be on here. Her's was the best ever.

sorry that i cant give you my red velvet recipe but the one that was posted looks like it would be good i would increase the cocoa to 1/4 cup and try the dark cocoa instead of the regular cocoa

really rich cream cheese icing:


2 (8 oz) cream cheese, softened
1/4 cup of butter soft ( this helps with the cream cheese)
2 lbs of powdered sugar
1 tsp vanilla
1 tbl of heavy cream or milk

cream the cream cheese and butter together
add the vanilla then gradually add the powdered sugar and the cream or milk!

enjoy :) this is a big hit with all my customers

Red Velvet Cake
1 cup all-purpose vegetable shortening
1 tsp. salt
2 1/4 cups sugar
1 cup buttermilk
3 medium eggs
2 tsp. vanilla
2 heaping Tbls. cocoa
1 1/2 tsp. baking soda
3 - 1 oz. bottles red food coloring
1 1/2 Tbls. vinegar
3 1/4 cups All-Purpose Flour
Preheat oven to 350 degrees.
Grease and flour two 9 inch cake pans.
Cream shortening and sugar in large mixing bowl until fluffy.
Continue to mix slowly and add eggs one at a time.
Whip until mixture is light and fluffy.
In small mixing bowl, make a paste of cocoa and food coloring.
Add to creamed mixture, whipping again until light and fluffy.
Stir flour and salt together.
Mixing batter slowly, add flour mixture alternately with buttermilk and vanilla and mix until smooth and fluffy.
Continue mixing slowly, sprinkle soda on top of batter, and fold in.
Fold in vinegar, then whip batter until light and fluffy.
Fill pans approximately 2/3 full and bake for 30 to 40 minutes or until done.
Cool 10 minutes before removing from pans.
Cool completely and ice.
ICING:
1/2 stick margarine
1 box powdered sugar
8 oz. pkg. cream cheese
1 tsp. vanilla
4 Tbls. vegetable shortening
Cream margarine, shortening and cream cheese together.
Add powdered sugar and vanilla and mix until smooth.
